Ultraviolet-light systems for improving food safety and security (Invited Paper)

Abstract

Ensuring the safety of food remains a critical and persistent challenge globally. Each year around the world, nearly 600 million individuals fall ill from consuming contaminated food, leading to around 420,000 fatalities. Separately, fungal contaminations pose a major global challenge to food security. These issues also cause enormous economic burdens. This presentation discusses the potential of utilizing ultraviolet-light systems to tackle both issues, along with opportunities for further enhancement.

Dr. Yi-Cheng Wang is an Assistant Professor in the Department of Food Science and Human Nutrition at University of Illinois Urbana-Champaign. His research focuses on developing engineering approaches that will enhance sustainability and/or improve food quality and safety. To date, he has been granted four U.S. patents and authored or co-authored 37 peer-reviewed articles, many in high-impact journals including Advanced Materials, ACS Nano, Nano Energy, and Biosensors and Bioelectronics. He has received awards from the Institute of Food Technologists, the American Society of Agricultural and Biological Engineers, and the National Science Foundation, among others.
